Does it matter if my guitar strings sound like sh-t when It's not amplified?

If there is fret buzz, then that is a problem with the guitar's action. But, electric guitars strings usually don't sound good unplugged. When practicing, play on a clean amp setting, so that you can hear mistakes better. Overall, it doesn't matter if the strings sound bad unplugged, but try new strings if you don't like the current ones.
